冰种吐司
所谓“冰种”,其实就是把发酵面团的原料混合后,室温发酵1小时,然后移入冰箱冷藏室发酵16小时以上。其他的操作方法跟普通面包没有大的区别。 这个面包口感很好,湿润柔软,不亚于著名的北海道面包。 模具:大号方形loaf盘一个 冰种材料: all purpose面粉100克(其实bread flour更好,但是家里正好没有,我懒得出去买了),牛奶100克,酵母1/2 tsp。 做法: 上述材料混合均匀,容器上盖盖子或者保鲜膜,室温发酵1小时,看到面团体积膨大到2倍,然后移入冰箱冷藏。 第二天制作主面团。 主面团材料: 1. 面粉210g; 2. 酵母1 tsp; 3. 糖1/4 cup; 4. 盐1 tsp; 5. 鸡蛋一个,匀出一点蛋黄做刷表面用; 6. 牛奶1/4 cup+1~2tbsp (豆豆猫注:不同的面粉吸水性不同,因此液体量酌情增减); 7. butter 2 tbsp(一条上面的两个格子)。 做法: 1. 将头一天做好的冰种从冰箱中取出来,加上述材料的1~6,统统放进面包机,dough程序。揉面结束后,加入butter,再次启动dough程序,揉面发酵。 2. 面团发好后,取出分割成3份,滚圆,盖上厨房纸松弛15分钟; 3. 每一份面团排气,擀成圆片,从两边向中间等分,折3折,然后纵向擀开,卷起来,依次排在loaf盘里; … Continue reading

今天被儿子鄙视了一下
下午带儿子出去打球,人行道上赫然躺着一条肥大的肉虫子。我飞速跳开。儿子在后面慢悠悠地说“妈妈,a scientist is supposed to study on everything, including worms.” ——哟喝,小子话里有话呀。我“so??”儿子道“妈妈你不是个scientist嘛,怎么还怕虫子呢?” 我:“啊,科学家就不能怕虫子啦?” 儿子车轱辘话“a scientist is supposed to study on everything, including worms,妈妈你是scientist,所以你不应该怕虫子,你应该study on it。”

酸奶蜂蜜全麦面包
歪打正着的一个面包,本来是想做北海道吐司的,结果周末打开冰箱一看,牛奶就剩了个瓶底儿了!heavy cream也没有,倒是上次做的酸奶还剩一小瓶,还有半袋奶粉,就把这些东西攒巴攒巴做了这么个面包,结果味道还真是不错。 材料: 1. 普通面粉3 cup,全麦粉1 cup; 2. 蜂蜜 1/3 cup; 3. 酸奶 1/2 cup; 4. 奶粉30g+1 cup水兑开(完全可以用1 cup牛奶代替); 5. butter 3 tbsp; 6. 盐 1 tsp; 7. yeast 3 tsp; 8. 鸡蛋一个,把蛋黄匀出来半个兑少许水调稀一点,留着刷表面。 做法: 模具:两个长方形的loaf盘 1. 把上述材料全部倒进面包机,发面程序——其实应该用后油法,把除了butter之外的材料放进去揉20分钟,再放butter进去揉出薄膜状,我急着带儿子出去玩儿,懒得等了,就直接用了发面程序; 2. 面团发好之后取出来,排气,分割成6份,滚圆,松弛15分钟; 3. … Continue reading

小胖爱读书
早上哥哥在读书,小胖坐在我身上,流着哈喇子特认真地听,俩小胖眼儿还盯着哥哥的书看——大字不识一个,还看书!哥哥边读,小胖听得嘎嘎直笑。哥哥一停小胖就哭。
