中种法果料面包——潘妮朵妮
我没有专门的模子,就用了一个8吋的铝制戚风烤盘,里面涂油防粘。 A. 中种面团: 面粉200g,蜂蜜30g,酵母2tsp,牛奶1/2 cup B. 主面团: 面粉100g,糖20g,盐1/2tsp,鸡蛋一个,butter 2/3条(约80g,切小块) C. 果料: 葡萄干1 cup,cranberry 干1/2 cup,rum酒4 tbsp(我家里没有rum,就用了伏特加代替) 做法: 1. 中种面团材料放进面包机,发面程序; 2. 葡萄干和cranberry干混合放在大碗里,倒入rum酒,微波炉高火2分钟,取出,拌匀,晾凉待用; 3. 中种面团发酵完毕后,取出,撕成小块,和主面团材料(除butter之外),一起再放进面包机,揉到5分钟,然后把切成小块的butter放进去,揉匀,再次发酵; 4. 发好的面团取出,把浸好的果料揉进去,整形,放在模子里,二次发酵; 5. 当面团发到模子的8~9分满的时候,放进预热350F的烤箱,烤30分钟左右。
